What is cold extracted honey?

Cold extracted honey is spun at high speeds in a large barrel that uses centrifugal force and absolutely NO HEAT to remove the honey. Since bees work hard to fan their hives and keep their honey under 95 degrees, it is essential for the quality of the honey to keep it unheated. Heated honey is much easier to work with but it changes the internal structure and decreases shelf life as well as flavor. You won't see out honey in a honey stick and it crystalizes more readily but since it is spun so fast, it keeps a good spreadable consistency. We strive to perfect cold extract because it is extremely beneficial in keeping the natural pollen, amino acids, and enzymes still intact. Our honey is the purest you are going to get!
What is raw honey?

Raw honey is best described as honey “as it exists in the beehive” (1). It is made by extracting honey from the honeycombs of the hive and pouring it over a mesh or nylon cloth to separate the honey from impurities like beeswax and dead bees (2). Once strained, raw honey is bottled and ready to be enjoyed.
What is the process of making honey

House bees take the nectar inside the colony and pack it away in hexagon-shaped beeswax honey cells. They then turn the nectar into honey by drying it out using a warm breeze made with their wings. Once the honey has dried out, they put a lid over the honey cell using fresh beeswax – kind of like a little honey jar
Why should you not heat honey?

When honey is heated or cooked, the sugar and fructose in the honey change their chemical composition as a result of a browning effect called the Maillard Reaction. Heating honey also lowers its quality, and it loses essential enzymes and nutrients
What are the health benefits of honey?

In addition to its use as a natural sweetener, honey is used as an anti-inflammatory, antioxidant and antibacterial agent. People commonly use honey orally to treat coughs and topically to treat burns and promote wound healing.
How should honey be stored at home?

Keep your honey on the shelf in your kitchen or pantry in moderate temperatures. Honey should not be kept in the refrigerator. Keep your honey in a capped or covered container.
Does honey every go "bad" or spoil?

With proper storage, honey will keep until you use it up! Honey has been found in ancient Egyptian tombs- still good!
Why does honey sometimes look like it is whitish, and hard?

All natural honey will eventually "crystallize"- Nature's way of preserving honey. Do not throw it away- just place the container in a bowl of warm water; stir every few minutes. Repeat until the honey becomes to the consistency that you prefer.
How do honey varieties get their taste?

Each variety of honey gets its unique taste from the nectar of the flowers the honeybees visit along with enzymes in their "honey stomach", which makes honey from the flower nectar. That's why we say "The flavor is in the flower!"
